  • 1 package of ladyfinger biscuits

  • 2 cups heavy cream

  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 1 envelope unflavored gelatin

  • 3 tablespoons cold water

  • 1/4 cup boiling water

  • 1 cup raspberry jam

  • Fresh raspberries, for garnish

Directions

  • Line a round cake pan or springform pan with plastic wrap. Arrange the ladyfinger biscuits vertically around the sides of the pan, and place a layer of biscuits on the bottom of the pan. Set aside.
  • In a large bowl, beat the heavy cream, sugar, and vanilla extract until soft peaks form.
  • In a small bowl, sprinkle the gelatin over the cold water and let stand for a few minutes to soften. Then add the boiling water and stir until the gelatin is completely dissolved and the mixture is clear.
  • Gradually whisk the gelatin mixture into the whipped cream until well incorporated.
  • Spread a layer of raspberry jam over the biscuits at the bottom of the pan. Then pour the cream mixture into the pan.
  • Refrigerate the Charlotte Russe for at least 3 hours, or until set.
  • Just before serving, remove the Charlotte Russe from the pan by lifting the plastic wrap, then remove the plastic wrap completely. Garnish with fresh raspberries.
  • Serve the Charlotte Russe in slices, like a cake.
