Experience the rich flavors of Mexican cuisine with this easy-to-make, one-pot Tamale Pie.


  • 1 lb ground beef

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 1 cup corn kernels

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) tomato sauce

  • 1 package (8.5 oz) cornbread mix

  • 1 cup shredded cheddar cheese

  • Spices: salt, pepper, chili powder, cumin, garlic powder


  • In a large skillet, brown the ground beef over medium heat. Drain the excess fat and set the beef aside.
  • In the same skillet, sauté the onion and bell pepper until softened, about 5 minutes.
  • Add the corn, black beans, tomato sauce, and spices to the skillet. Stir to combine, then add the cooked ground beef back to the skillet. Simmer for 10 minutes.
  • While the mixture simmers, prepare the cornbread mix according to the package instructions.
  • Preheat the oven to 400°F (200°C).
  • Pour the cornbread batter evenly over the beef mixture in the skillet.
  • Bake the tamale pie for 20-25 minutes, or until the cornbread is golden and cooked through.
