  • 1 pound boneless, skinless chicken breast or thighs, trimmed, if necessary, and cut into bite-size pieces

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

  • 4 cloves garlic, minced

  • ½ cup dry white wine

  • Juice and zest of 1 lemon

  • 10 cups chopped fresh spinach

  • 4 tablespoons grated Parmesan cheese, divided


  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper and add it to the skillet. Cook for 5-6 minutes, stirring occasionally, until browned on all sides.
  • Add the garlic to the skillet and cook for 30 seconds, stirring constantly.
  • Pour the white wine into the skillet and stir to scrape up any browned bits from the bottom of the pan.
  • Add the lemon juice and zest to the skillet and stir to combine.
  • Reduce the heat to medium-low and add the chopped spinach to the skillet. Cook for 2-3 minutes, stirring occasionally, until the spinach has wilted.
  • Add the cooked pasta to the skillet and stir to combine everything. Divide the pasta and chicken mixture evenly among four plates.
  • Sprinkle each plate with 1 tablespoon of grated Parmesan cheese and serve immediately.
