While lobster bisque might seem like a dish reserved for special occasions or high-end restaurants, I’m here to tell you that making it at home is not only doable, but it’s also absolutely worth the effort.

The Allure of Lobster

What’s so special about lobster? It’s a shellfish that boasts a delicate yet distinct flavor, not to mention its succulent texture. And when it’s cooked right, lobster can transform an ordinary dish into a memorable culinary experience.

Tip: When selecting lobster, go for fresh if you can. This will give your bisque the best flavor.

The Magic of Bisque

Originating from France, bisque is a smooth, creamy soup that’s traditionally made with crustaceans like lobster, crab, or shrimp. The process of making bisque involves simmering the shellfish in a broth to extract all the flavors, then blending it into a creamy, dreamy soup.

Tip: Don’t rush the simmering process. It’s this slow cooking that gives bisque its intense, mouthwatering flavor.

Delight your senses with this creamy and luxurious homemade Lobster Bisque. This gourmet soup is easier to make than you think!

Ingredients

  • 2 live lobsters, about 1.5 pounds each

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 2 celery stalks, chopped

  • 2 cloves of garlic, minced

  • 4 cups fish or vegetable stock

  • 2 cups heavy cream

  • Salt and pepper, to taste

  • Fresh chives for garnish

Directions

  • In a large pot, cook the lobsters in boiling water for about 15 minutes. Remove the lobsters and let them cool. Reserve the cooking liquid.
  • Remove the meat from the lobster shells. Set the meat aside and crush the shells.
  • In the same pot, heat olive oil and add the onion, celery, and garlic. Sauté until the vegetables are soft.
  • Add the crushed shells to the pot, followed by the reserved cooking liquid and the stock. Bring to a boil, then reduce the heat and simmer for about 1 hour.
  • Strain the soup, discarding the shells and vegetables. Return the strained liquid to the pot.
  • Add the cream to the pot and bring to a simmer. Season with salt and pepper.
  • Cut the lobster meat into bite-sized pieces and add it to the pot. Cook for a few more minutes until the lobster meat is heated through.
  • Serve the soup hot, garnished with fresh chives.

Notes

  • For a more decadent bisque, add a splash of brandy along with the cream.
  • The soup can be made up to a day in advance and reheated just before serving. This actually allows the flavors to meld and deepen.
  • You can also use already cooked lobster meat and lobster broth for a quicker version of this recipe.

This Homemade Lobster Bisque is a luxurious dish in itself, but to make it an even grander meal, it can be paired beautifully with a loaf of crusty French bread to soak up the velvety bisque. You could also pair it with a light salad like a classic French vinaigrette salad for a well-rounded, satisfying dinner.

If you’re thinking about wine, a Chardonnay with balanced acidity complements the richness of the bisque, making each sip and bite a harmonious play of flavors.
