I recently discovered this amazing Refreshing Mediterranean Pita Salad that’s perfect for a light lunch or dinner. I can’t wait to share this delightful recipe with you!

During my travels to the Mediterranean, I fell in love with the vibrant flavors and colorful dishes that are a staple in the region. As I strolled through a local market, I was inspired by the fresh produce and aromatic herbs that surrounded me. That’s when I came up with the idea to create this scrumptious salad.

This refreshing salad is perfect for warm summer days, outdoor picnics, and even holiday gatherings. The crisp veggies, toasted pita, and zesty mint dressing come together for a satisfying and nutritious meal that’s great for sharing with family and friends.

As someone who loves experimenting in the kitchen, I’ve made this salad countless times. Through trial and error, I’ve learned some valuable tips to help you avoid common mistakes and achieve the best results:

  1. Be sure to use whole grain pitas for added fiber and nutrients. It’s important to toast the pita pieces until they’re crispy and golden brown – this adds a delightful crunch to the salad.
  2. Don’t skimp on the fresh mint leaves. They’re a key ingredient that gives the salad its unique, refreshing flavor.
  3. Customize the salad to your liking by adding grilled chicken, chickpeas, or your favorite protein.

Frequently Asked Questions

Q: Can I use a different type of lettuce?

A: Absolutely! Feel free to swap the romaine lettuce for your favorite greens, such as spinach or arugula.

Q: Can I make the salad ahead of time?

A: Yes, but it’s best enjoyed fresh. If you need to prepare it in advance, store the toasted pita separately and add it just before serving to maintain its crunchiness.

Q: What can I use instead of ground sumac?

A: If you can’t find ground sumac, try using a pinch of lemon zest or a splash of lemon juice for a similar tangy flavor.

A light and delicious Mediterranean pita salad with crisp vegetables, toasted pita, and a zesty fresh mint dressing that’s perfect for a nutritious lunch or dinner.

Ingredients

  • Toasted Pita
  • 2 whole grain pitas (7” diameter), torn into bite-sized pieces

  • 2 tablespoons extra-virgin olive oil

  • Pinch of fine sea salt

  • Salad
  • ½ batch fresh mint dressing (you’ll need ½ cup, but make the full batch because this dressing is great to have on hand)

  • 8 to 10 ounces fresh romaine lettuce, chopped (about 1 medium head of lettuce)

  • 1 large tomato, chopped, or 1 cup quartered cherry tomatoes

  • 1 cup quartered and thinly sliced Persian or English cucumber

  • 1 cup chopped red onion (about 1 small onion)

  • ½ cup chopped radish (about 3 medium)

  • ½ cup torn fresh mint leaves

  • ½ cup crumbled feta (optional)

  • Ground sumac, for sprinkling on top

Directions

  • Preheat your oven to 350°F (180°C). In a bowl, toss the torn pita pieces with 2 tablespoons of extra-virgin olive oil and a pinch of sea salt. Spread them on a baking sheet and bake for 10 minutes or until crispy and golden brown. Remove from the oven and let them cool.
  • While the pita is toasting, prepare the fresh mint dressing by combining ½ cup extra-virgin olive oil, ¼ cup fresh lemon juice, 2 minced garlic cloves, ¼ cup chopped fresh mint, 1 teaspoon honey, ½ teaspoon fine sea salt, and freshly ground black pepper in a jar or bowl. Shake or whisk until well combined.
  • In a large salad bowl, combine the chopped romaine lettuce, tomato, cucumber, red onion, radish, and torn fresh mint leaves. Drizzle half of the fresh mint dressing over the salad and toss gently to combine.
  • Add the toasted pita pieces and crumbled feta (if using) to the salad, and toss again to mix everything well.
  • Serve the salad on plates or in bowls, sprinkled with ground sumac and drizzled with more fresh mint dressing as desired.

Notes

  • You can add grilled chicken or chickpeas for extra protein.
  • The salad can be stored in the refrigerator for up to 2 days, but it’s best enjoyed fresh.

This Refreshing Mediterranean Pita Salad is a delightful combination of textures and flavors, making it a great choice for a light lunch or a healthy dinner.

It pairs beautifully with grilled chicken, fish, or your favorite protein. Enjoy this vibrant salad during the warmer months or whenever you crave a refreshing and satisfying meal.
