Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 ½ pounds ground chicken thighs

  • 1 can (14.5 oz) diced tomatoes

  • 2 cans (15 oz each) white beans, drained and rinsed

  • 2 cups chicken broth

  • 2 teaspoons ground cumin

  • 1 ½ tablespoons chili powder

  • Salt and pepper, to taste

  • Optional toppings: avocado, sour cream or Greek yogurt, shredded cheese, chopped cilantro, lime wedges

Directions

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  • Stir in minced garlic and cook for an additional 1 minute.
  • Add ground chicken thighs to the pot, breaking it apart with a wooden spoon. Cook until no longer pink, about 8 minutes.
  • Stir in diced tomatoes, white beans, chicken broth, ground cumin, and chili powder. Season with salt and pepper to taste.
  • Bring the mixture to a simmer, then reduce heat to low and let it cook for 30 minutes, stirring occasionally.
