Ingredients

  • 1 cup diced sweet potatoes

  • 1/2 chopped red onion

  • 2 chopped bell peppers

  • 2 chopped bell peppers

  • 1 jalapeno (optional), diced

  • 4 eggs

  • 2 green onions, sliced

  • 1 tablespoon chopped fresh rosemary

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Directions

  • In a large skillet, heat the olive oil over medium-high heat. Add the diced sweet potatoes and cook, stirring occasionally, until they are lightly browned and tender, about 8-10 minutes.
  • Add the chopped red onion, bell peppers, minced garlic, and jalapeno (if using) to the skillet with the sweet potatoes. Cook, occasionally stirring, until the vegetables are tender and lightly browned, about 5-7 minutes.
  • While the vegetables are cooking, crack the eggs into a separate bowl and whisk them together. Add the sliced green onions and chopped rosemary to the eggs and stir to combine.
  • Once the vegetables are cooked, pour the egg mixture and season everything with salt and pepper to taste.
  • Cover the skillet with a lid or a piece of aluminum foil and cook until the eggs are set for about 5-7 minutes.
  • Once the eggs are cooked to your desired consistency, remove the skillet from the heat and serve these breakfast sweet potatoes hot with your favorite breakfast sides, such as toast.
