Ingredients

  • 4 salmon fillets, skin-on

  • 1 ½ tbsp. Cajun seasoning

  • 4 tablespoons olive oil, divided

  • Salt, to taste

  • Mango Salsa
  • 1 ½ cups mangoes, chopped

  • ¼ cup red onions, finely chopped

  • ¼ cup bell pepper, diced

  • 1 teaspoon jalapeño, finely chopped

  • 3 tablespoons cilantro, chopped

  • 2 ½ teaspoons lemon juice 

  • ¼ teaspoon cumin powder

  • ¼ teaspoon smoked paprika

  • Salt, to taste

Directions

  • Pat the salmon filets dry using a paper towel.
  • Drizzle 1 tbsp. Use olive oil over the salmon fillet, and spread it evenly over the fillets using your hands. 
  • Season the fillet with salt and generously sprinkle Cajun seasoning. 
  • Place a nonstick pan over medium heat. Add the remaining olive oil to the pan.
  • Once the oil heats up, place the salmon fillets’ skin on the pan. 
  • Let them cook for about 4 minutes.
  • Flip the fillets to cook the skin side for 3 minutes. Once done, take the salmon off the pan and onto the serving plate. 
  • Add diced mangoes, onion, bell pepper, jalapeno, and cilantro in a large mixing bowl.
  • Drizzle lemon juice and season with smoked paprika, cumin powder, and salt.

  • If you are using frozen salmon fillets, thaw them by refrigerating them overnight.
  • Remember to pat the fillet dry to remove extra moisture.
  • Always cook salmon by placing skin side up. Also, wait patiently for at least 3 to 4 minutes without flipping or touching the salmon.
